Chewy Chocolate Chip Granola Bars: Ella and Annie Blog
Recipe adapted from Inspired Taste

These are the BEST homemade granola bars! They hold together when cold and are absolutely delicious! Best part, you can understand all the ingredients! Easy to make and only a few simple ingredients. You’re kids will love them!

What you need:

2 1/2 cups rolled oats, chopped or pulsed in a food processor, just slightly.
1/3 cup honey
1/4 cup salted butter
1 teaspoon vanilla extract
1/4 cup light brown sugar
1/2 cup mini chocolate chips + more for topping

Note: feel free to add in dried cranberries or yogurt chips too!

Place rolled oats to a medium bowl. Set aside. In a small sauce pan melt butter, brown sugar, vanilla and honey. Once melted pour over rolled oats and mix until combined. Fold in chocolate chips. They might melt slightly and that is good! Helps hold the bars together better.

Place mixture into an 8×8″ greased baking dish. Using a spoon press down into pan to pack the granola bars. Refrigerate overnight for best results. Store in fridge.

If you are like us and can’t wait, place in freezer for 20-25 minutes and EAT!!! YUM!
