Getting ready to celebrate Valentine’s  day and need and extra special treat? You will absolutely love these red velvet whoopie pies we made for our Peanut’s Gang Valentine party. They are soft baked cookies with a cream cheese frosting in the center. They will be gone before you know it!
Cookies:
2 cups flour
2 tablespoons cocoa powder
1/2 tsp. baking powder
1/4 tsp. salt
8 tablespoons softened butter
1 cup brown sugar
1 large egg
1 tsp. vanilla
1/2 cup heavy whipping cream
1 small bottle red food coloring ( 1 ounce )
Frosting: 
8 oz. cream cheese, at room temperature
5 Tbsp. butter at room temperature
1 tsp. vanilla
2 1/2 cups powered sugar
For cookies, combine dry ingredients. In a separate bowl, combine butter, sugar, egg, vanilla. Mix until smooth. Add the butter mixture to your flour mixture. Combine whipping cream and red food coloring. Slowly add whipping cream mixture to cookie dough. Mix until all ingredients are combined.
Using a small candy scoop, scoop cookie batter onto a greased pan. Bake at 375℉ for 8 minutes. Let cool.
For frosting, combine all ingredients until smooth. Put a tablespoon of frosting between two cookies. Store in fridge in an airtight container.
