I am on a mission for the BEST mac n’ cheese recipe! I find that with homemade mac n’ cheese, the sauce is never super creamy. The cheese is sticky and stringy. I am one step closer with this greek yogurt mac n’ cheese. DELICIOUS!I adapted the recipe slightly from Cook A La Mel.My kids loved the colorful noodles. I would try a variety of cheese the second time around for more flavor.Ingredients
- 8 oz elbow noodles (use veggie noodles or whole grain)
- 8 oz finely shredded cheese (cheddar, jack, a blend)
- 1/2 cup plain greek yogurt (maybe a little more depending on sauce consistency)
- 1/8 teaspoon garlic powder
- 1/8 teaspoon onion powder
- salt and pepper to taste
- 1/4 cup leftover noodle water
Directions
Cook elbow noodles according to package instructions. Set aside. In a small sauce pan melt 1/4 cup left over noodle water and cheese. Mix in greek yogurt, garlic and onion powder. Combine sauce with noodles and serve while hot!
