Last night I was trying to figure out what to make for dinner. Everyday I text my husband at work and give him two options. I offered BBQ chicken or homemade pizza. He replied, why not a BBQ chicken pizza! Ha! PERFECT! So here we are. A delicious BBQ chicken pizza topped with fresh cilantro and tangy BBQ sauce.
I typically use my bread machine for the pizza dough when I plan ahead. My dough setting takes about 90 minutes. There are also super easy recipes for pizza dough with out using a bread machine or recipes with out yeast.
So! There really are no excuses but to make a FRESH and yummy BBQ chicken pizza for dinner tonight.
Let’s start with the dough.
2 lb Pizza Crust
- 3/4 teaspoon coarse salt
- 4 cups all-purpose flour
- 2 teaspoons or 1 packet yeast
- 1 1/4 cups warm water
- 3 tablespoons canola oil
Combine all the ingredients, in order, in the bread pan. Select your dough setting and press start. Recipe from Sunbeam.
Pizza Toppings
- Freshly chopped cilantro
- 2 frozen chicken thighs, cooked on grill and sliced
- Small sweet onion, finely chopped or red onion
- 1 red bell pepper, chopped
- BBQ sauce
- 2 cups shredded cheese
Preheat oven to 400 degrees. Take your bbq chicken that you have sliced and coat with bbq sauce.
Roll out pizza dough. Sprinkle flour on surface to keep dough from sticking. Top with bbq sauce, cheese, chicken, onion, bell pepper and cilantro.
Bake for 25 minutes. Slice and serve with a side of BBQ sauce or ranch! Let me know what you think.
