Meatloaf. Just one of those recipes you have to get right. I found that the key to a moist meatloaf is using fresh bread crumbs. And, it is a must that you have a killer sauce! Traditionally I serve my meatloaf dinners with cheesy mashed potatoes. This is an inexpensive dinner as well as quick to make for that family on the go. It is soccer season in our neck of the woods and BUSY describes our daily routine.

Ingredients
2 lbs ground beef
1 egg, slightly beaten
1 slice of bread, cut into cubes
1 small onion, finely chopped
2 teaspoons coarse salt
1/2 teaspoon black pepper
4 tablespoons ketchup or BBQ sauce
1/4 cup milk
Combine all ingredients, mix well. Bake in a loaf baking dish for 80 minutes at 350 degrees.
Sauce
1/4 cup ketchup
2-3 tablespoons brown sugar
1/2 teaspoon dry mustard
Whisk together ingredients. Top cooked meatloaf with sauce. Tastes delicious on mashed potatoes too!
Mashed Potatoes
2 large russet potatoes, peeled and diced
1/4-1/2 cup milk
2 teaspoons coarse salt
1 teaspoon pepper
2-3 tablespoons butter
1/4 cup sour cream
1/2 cup shredded cheese
Boil potatoes until cooked. Mash. Using and electric mixer, mix together remaining ingredients. Give or take ingredients depending on taste and texture.
