I am always on the go! My crockpot has become my best friend. I made these delicious pulled pork sliders in my crockpot last night while the kids and I attended a birthday party. I made the coleslaw ahead too!
Making food ahead is a serious stress reliever for me with our family of 5. These sliders will appeal to the kids because of their fun size! You can substitute chicken with pork if you have a picky eater.
Pork
2 lb pork (you can you pork shoulder, butt, rib roast)
1 tablespoon olive oil
1 bottle of your favorite BBQ sauce
1/4 cup apple cider vinegar
1/4 cup chicken broth
1/2 tablespoon worcestershire
2 tablespoons brown sugar
1/2 tablespoon chili powder
1 teaspoon coarse kosher salt
Set your crockpot to high for 6 hours. Pour olive oil in crockpot. Place pork in crockpot. Add the bbq sauce, apple cider vinegar, chicken broth and worcestershire over the pork. Mix the brown sugar and chili powder and salt together and rub onto pork. Cook on high for 6 hours.
Coleslaw
1/2 cup mayo
2 tablespoons sugar
1 tablespoon white wine vinegar
1/2 teaspoon coarse salt
1/2 teaspoon pepper
1 1/2 tablespoons lemon juice
Bag of coleslaw
Whisk together mayo, sugar, vinegar, salt, pepper and lemon juice. Fold dressing into the coleslaw.
When pork is done, take two forks and pull pork apart in the crockpot. Toast the hawaiian rolls and top with pork and coleslaw. Eat and enjoy!
